And as if this recipe couldn’t get any better … the fact that it is so insanely simple to make, makes it that much better. It takes a few minutes to prepare and cut your fruit and veggies but after that, it is as easy as combining every thing in a bowl, adding a dash of lime juice and you are ready to impress!
Getting Fancy with your Salsa
A fresh Mango Avocado Salsa is the perfect way to dress up a dinner plate, and bring a little summer loving to the table. Wow your family, friends, and neighbors at the next party, picnic or barbecue by being the hero who brought such a yummy and colorful side dish. Let your salsa bring a flavorful twist nobody was expecting, but no one can resist.
In fact, this recipe screams all things summer. It is the perfect accompaniment in those summer months when mangos are their ripest and the weather is calling you outside to your grill. Spice up the menu this week, you know you want to.
I also love that this recipe makes A LOT. We use it for big family dinners, parties, barbecues, you name it. So if you are looking for more of a normal portion size, for a family with a little leftover, I would definitely recommend halving the recipe.
Picking and Preparing Mangos
Now, let’s talk mangos. You want to make sure you are using mangos that are not too firm, but not so soft and ripe that your salsa gets too wet.

Or if you are like me … skip all the fuss and trouble, keep it simple and substitute the fresh mango for frozen. Way less messy!
Let’s Make Salsa Magic
You will want to make sure you choose perfectly ripe avocados. The best way to find ripe avocados is by putting your avocado through the test of the four P’s. Pressure, Color, Stem and Bruises. We give all the details on the 4 Ps in our Avocado Salsa recipe. Don’t miss it!
This recipe calls for both tomatoes and cherry tomatoes. Don’t skip out on the two different types here. Cherry tomatoes with their tougher skins give more bite to this salsa than just diced tomatoes alone.
When it comes to corn you can use both canned or frozen. We use canned corn out of convenience but I’m sure fresh corn could be substituted as well.
When it comes to salsas there are many components that make up such a complex medley of flavors. An important but often over looked ingredient is red onion. Red onion is provides an additional sweetness and definitely adds another layer to this dish. But even more importantly is what it does for the aesthetic of your salsa. Red onion adds a beautiful pop of color sure to be missed if left out.
I have always enjoyed the taste of cilantro but silently cursed it on ingredient lists as I do not enjoy preparing it. Well that was until recently when on one of our kitchen gadget escapades on our family vlog we came across a handy dandy tool that has changed my cilantro and fresh herb game. When choosing between fresh lime juice, bottled lime juice and powdered True Lime you all know by now where we stand. We ere on the side of convenience 9 times out of 10. And that is where True Lime powder becomes one of our favorite kitchen secret ingredients. But if you have the patience to squeeze your own fresh lime juice that is the way to go. Fresh is always best.
Salt may seem small and insignificant but anyone who knows there way around the kitchen knows it is a key ingredient that drives home the flavor punch in almost every recipe. For the love of all things delicious … don’t forget the salt.
Pro Chef – Mom Hack
Did you know some people experience Mango allergies. The allergy comes not from the fruit but the peel of the mango. Most often it causes a rash or itching in the mouth, face and lips. To avoid this, simply remove the skin before eating for an itch-free treat. Or skip the hassle, and go with frozen pre-cut mango, skipping fresh mango all together.
Make It Your Own
I’ve said it before and I will say it again, the best part of being the head chef in your own kitchen is that you can take any recipe and alter it to your specific tastes.
Don’t love mushrooms or onions, leave them out. Can’t get enough of cilantro and garlic? Add a little more. Customize to your heart’s desire! In this salsa some of the add in suggestions we would make are adding diced red bell pepper for extra bite, jalapeño for spice and heat, or strawberry for color and sweetness.
Presentation is Key
When it comes to presentation I have always believed the way your food looks impacts the flavor. We all judge food by its appearance. Food presentation can go a long way. With that said, this dish is prettiest when mixed very little. The more you mix the more it breaks down the fruit and avocado.
Due to this we suggest waiting to add the fruit and avocado till the very end. After cutting your avocado, tomatoes, onion and mango in larger pieces add them to your bowl with your other ingredients. Once added, only mix once. Less mixing gets you more of a chunky salsa appearance, more vibrant colors, prettier presentation — more mixing gets you a guacamole look.
Serve and Enjoy
After enjoying this salsa it can be stored in the fridge for up to three days – but it is definitely enjoyed best while fresh. Once it starts to get a little brown or on the slimier side from the breakdown of sugars, try throwing it in a blender and turn it into a puree to serve as a sauce over grilled meat.
- 1 can of corn - drained
- 4-5 medium tomatoes - diced
- 1 pkg cherry tomatoes - halved
- 1 bunch cilantro
- ½ of a large purple onion
- 1 teaspoon pepper
- 2 teaspoons salt
- 2 cups mango
- 5 large avocados
- 3 limes - juiced
- Drain corn and add to large mixing bowl.
- Cut tomatoes into bite sized pieces and halve or quarter the cherry tomatoes adding them to the bowl.
- Chop the cilantro and add to bowl.
- Dice the onion and add to bowl.
- Add salt and pepper and stir ingredients till mixed.
- Add cut mangos, avocado and fresh lime juice to the bowl.
- Mix the ingredients in the bowl gently till everything is just combined being careful not to stir too much.
- Cover and place in fridge to chill for at least 30 minutes but better if chilled longer.
- This recipe as is, makes ALOT. We use it for family gatherings or as a party dish. If making for a smaller group we suggest halving the recipe for a more manageable size.
- Switch things up, add red bell pepper for some bite, jalapeno for heat or strawberry slivers for extra sweetness.
- Substitute fresh mango for frozen mango. The same can be done with the corn.
- To avoid a slimier salsa wait to add your avocado and mango until the very end. Stirring just long enough to mix everything together.
- Can be stored in the fridge for 3 days, but is best when served fresh.
- If after storing the leftovers in the fridge for a few days it begins to get slimy, throw everything into a blender and puree into a sauce to serve over grilled meat.
