Crockpot Chicken Noodle Soup is a cozy make ahead soup. With classic ingredients it is easy to enjoy a yummy, heartwarming dinner with little to no work.

🥣 Step-by-Step Instructions
Firstly, pour the olive oil over pot to coat both the bottom and sides. Then when done add the chicken thighs to the pot with their skin still on.
Afterwards go ahead and add the remaining ingredients to the slow cooker (except for the noodles and lemon - save those for the end).
When done allow your Crockpot Chicken Noodle Soup to cook on low for 8 hours or on high for 4-5 hours. Then an hour before serving you will want to remove the bay leaves from the slow cooker and discard them.
Afterwards pull the chicken from the slow cooker and begin removing the meat from the skin and bones. When done add the cooked chicken back to the slow cooker, shredding if needed.
At this point the chicken should be “fall apart” tender. I find it is easy to remove the bone and skin and shred chicken with a fork.
When done turn the heat on the the slow cooker to high and add the uncooked noodles to the soup. Stir soup together and let the slow cooker do all the work.
The pasta will only need to to cook for 10-15 minutes. You want it to be just under cooked. The noodles will continue to cook as the soup sits in the residual heat of the soup itself.
Once pasta is cooked add the juice from one lemon to the soup. Add additional salt and pepper to taste as needed. Then give soup a final stir and serve while hot. Consider adding freshly chopped parsley when serving for a bit of freshness and color.

If preferred you can use chicken breasts in place of chicken thighs. Keep in mind however, the breasts will dry out or become tough the longer they cook.
We prefer using bone in, skin on chicken when making Chicken Noodle Soup as it not only adds extra flavor but also keeps the meat tender and from becoming tough.
🍽 Storing
Soup freezes well but I’d suggest pulling out a portion for freezing before adding the noodles. Or you can always cook your noodles separately then add pasta to individual bowls when serving so leftover soup can be frozen for later.
Then when ready to enjoy your crockpot Chicken Noodle Soup again, all you will need to do is thaw the soup overnight in the fridge, reheat over the stovetop or in the microwave and add in cooked noodles before serving.
Leftover soup can be stored in the fridge for up to 4 days or in the freezer for 3 months. When ready to enjoy again you can reheat the soup on the stovetop or in the microwave.

Crockpot Chicken Noodle Soup

Ingredients
- 2 tablespoons olive oil
- 2 pounds chicken thighs leave skin on
- 1 medium onion diced
- 3 celery stalks diced
- 2 large carrots diced
- 2 tablespoons minced garlic
- 1 tablespoon salt
- 1 teaspoon pepper
- 2 bay leaves
- 1 teaspoon dried thyme
- 96 ounces chicken bone broth
- 3 cups egg noodles uncooked
- 1 lemon juiced
Instructions
- Pour oil over pot and let coat bottom. Add chicken thighs with skin still on to crockpot.
- Add remaining ingredients to the slow cooker - aside from the egg noodles and lemon juice.
- Allow soup to cook on low for 8 hours or 4 hours on high.
