🍳 Step-by-Step Instructions
Firstly, let's begin by generously greasing a 9x13 casserole dish and setting it aside. When done go ahead and pre-heat the oven to 350° F.
Preparing Ingredients
Then in a bowl let's combine the eggs, milk, honey, vanilla and cinnamon. Using a whisk go ahead and stir the wet ingredients together vigorously.
Afterwards set the wet mixture aside so we can prepare the other layers of the French Toast Bake breakfast casserole.
To prepare the other ingredients for layering you will need to slice the bread into bite sized pieces and cut your block of cream cheese into one inch squares. Then set each aside until ready to layer.
Layering
To begin layering the casserole lets start by adding half of the sliced bread pieces to the greased pan. Then follow that with pouring half of the wet mixture over the bread.
Lastly, top your first layer with half of the cream cheese blocks and blueberries.
Once the first layer is done go ahead and repeat the process using the remaining portions of each ingredient. Sprinkle top of the casserole with cinnamon.
When the second layer of the French Toast Bake breakfast casserole is in place you have one of two options.
Baking
If baking immediately go ahead and press the breading layers down gently into the wet mixture. This will help the bread soak up as much of the egg mixture as possible.
You'll want to then let the casserole sit on the counter for about five minutes to finish soaking up all the yummy goodness.
And if not baking your dish immediately, instead you will want to go ahead and cover it tightly and place it in the fridge to sit overnight where it will have plenty of time to absorb all the egg mixture and goodness.
When ready to bake go ahead and place your uncooked pan of French Toast Bake in the oven and allow it to bake for 40 minutes uncovered until it is golden brown.
When done cooking go ahead and remove the dish from the oven and serve up with your favorite breakfast toppings and enjoy!

I really love that there are so many ways to make this dish your own. Firstly, try swapping out those blueberries and cream cheese for another favorite flavor combo.
Spiced apples and candied nuts, strawberries and cream, bananas and caramel or keeping it simple with a cinnamon sugar crumble.
You can even get real crazy with it and add crumbled bacon or cooked sausage for a sweet and savory twist.
Also, easy to change up would be to switch out the type of bread you choose to use. Sourdough, brioche, cinnamon raisin bread, Hawaiian sweet bread or day old bagels.
💭 Top Tips
Try to avoid using bread that is too thinly sliced or overly squishy as it can absorb too much of that egg mixture making your whole dish soggy. Brioche, Challah, French Bread, Sourdough, or thick slices of wheat sandwich bread should all be great contenders.
This recipe is a great way to use up day old, stale or crusty bread. However, if you don't have any try leaving the bread out over night to help it dry out naturally. Or give it a little pre-toast in the oven if in a time crunch.

Easy to pull together, this sweet breakfast casserole is soaked in a classic French Toast egg mixture. Fluffy and gooey in the center every bite is warm and comforting.
Ingredients
- 10-12 slices of bread
- 1 ½ cups milk
- 4 eggs
- ⅓ cup honey
- 1 teaspoon vanilla
- 1 tablespoon cinnamon
- 1 cup blueberries
- 8 ounces cream cheese, cubed
Instructions
- Generously grease a 9x13 inch pan and set aside. Pre-heat oven to 350° F.
- In a bowl combine your eggs, milk, honey, vanilla and cinnamon. Using a whisk stir the wet ingredients together vigorously. Set the mixture aside.
- Slice bread into bite sized pieces and cut cream cheese into one inch squares. Set each aside for layering.
- Begin layering the casserole by adding half of the cut bread to the greased pan. Pour half of the wet mixture over the bread and top with half of the cream cheese blocks and half of the blueberries.
- Repeat the layering using the remaining half of each ingredient. Sprinkle the top of the casserole with additional cinnamon.
- If baking immediately press the breading layers down gently into the wet mixture to ensure as much of the egg mixture is soaked up as possible. Allow to sit on the counter for 5 minutes. (If not baking immediately cover tightly and place in fridge to let sit overnight and absorb the egg mixture.)
- Place pan in the oven and allow to bake for 40 minutes uncovered.
- When cooked through remove from oven and serve with favorite breakfast toppings.
