🥣 Step-by-Step Instructions
Firstly, you will want to pre-heat your oven to 350° F. Then line a baking sheet with parchment paper. This will help keep the mess to a minimum while making your Ritz Cracker Cookies.
Assemble Cookies
Afterwards place 30 Ritz crackers salt side down on the sheet, leaving space between each cookie base. When done add an unwrapped Reese's candy to the top of each cracker.
Then place the baking sheet in the oven for roughly 90 seconds to allow the candy to slightly melt. Pull the baking sheet from the oven. While chocolate is still warm top each stack with a second cracker so the top of each cracker is facing up.
Transfer the baking sheet to the fridge for 10 minutes to let cool completely.
Dip Cookies
Afterwards, in a large microwave safe bowl slowly melt the chocolate in 30 second bursts. If wanting your chocolate to have a smooth finish try adding a dash of coconut oil.
Then stir between each 30 second session until the chocolate is just melted. Be careful not to overheat your chocolate or it will scorch.
Once melted carefully drop each sandwich into the chocolate. Using tongs or a fork flip the sandwich over to make sure sandwich is fully coated. Gently lift the Ritz cracker cookie sandwich out of the chocolate.
Then tap the tongs or fork on the side of the bowl to remove any excess chocolate and transfer coated cookie to a lined baking sheet to cool and harden. Sprinkle your Ritz Cracker Cookies with desired toppings such as sprinkles, chopped nuts or sea salt flakes.
Decorate and Cool
Repeat the dipping process till all cookie sandwiches are coated. Then allow to sit until the chocolate has hardened entirely. To help make the hardening process go quicker place the baking sheet in the fridge or freezer to speed things up.
👩🏻🍳 Make it Your Own
If you have checked out any of our other recipes before, you know we encourage you to find ways to make each recipe your own! When it comes to personalizing your Ritz Cracker Cookies it couldn't be easier.
Change the Flavor Profile
While peanut butter and chocolate is a classic flavor combination there are many other ways to make these Ritz Cracker Cookies you own. You can try using Andes Mints for more of a thin mint cookie. You could also try swapping your Reese's for a Rolos candy and sprinkle with chopped pecans for a Turtle style cookie.
Really any type of candy will do! And be sure to finish off your cookies with a sprinkling of sea salt flakes or sprinkles for a festive treat anytime of the year.
Reimagine the Filler
While Reese's candy is convenient and simple there are many, many things you can use for your cookie sandwiches. Spread a layer of Nutella, peanut butter, or other favorite nut butter all work great.
You can also try adding a scoop of marshmallow fluff to any of your filling mixture choices. If making your own filling mixture I do suggest transferring your mixture to a ziplock bag and piping them on to the crackers for added ease.
Coating
When choosing a coating chocolate I do suggest choosing more of a premium type of chocolate as they tend to melt better.
If in a pinch you can always use baking chips though. Just be aware that baking chips do have stabilizers to help prevent melting. So you may need to add a dash of coconut oil to thin out the chocolate for easier dipping and give your Ritz cracker cookies that glossy finished look.
Candy coating chocolate, bakers chocolate all work well for coating your Ritz Cracker cookies. Semi-sweet, milk, and dark chocolate would all make for delicious options to coat your cookies.
🍽 Storing
Be mindful that if stacking the Ritz cracker cookies you will want to place a piece of parchment paper between the layers so the cookies do not stick together.
Any leftover cookies will need to be store in an airtight container. They will stay fresh for up to one week - if they can even last that long.
We prefer storing our leftover cookies in the fridge for less messy enjoyment. But you can certainly keep them on the counter if the house isn’t too warm.
Or if I know I'm not going to be eating them right away, I also love to freeze my Ritz cracker cookies. They make for the perfect cold, sweet and salty snack! I love them straight from the freezer or if you have the patience you can also allow them to thaw a little before enjoying.
