CHEESY BEEF ENCHILADAS VERDE

Slice peppers. In a small bowl mix sour cream and hot sauce then set aside.
In a large pot saute peppers in oil and season with salt and pepper to taste.
Add ground beef to the pot of peppers with taco seasoning and cook through.
Add salsa verde, seasonings, and mixed crema to the pot and stir together.
Pour Batter on to waffle iron and bake till golden brown.
Fill tortillas with beef mixture and place in pan. Pour salsa verde over the top.
Sprinkle the shredded cheese over the top of the enchiladas.
Place pan in the oven on a broil setting until cheese is melted and golden.
