"This is our new favorite Taco Night tradition. We love warming up with a big bowl and a slice of cornbread."

In a large pot sauté onion with butter till translucent.

Add broth, boullion, enchilada sauce, and cream of chicken soup to onion.

Add beans, corn, tomatoes, green chilies, chicken and quinoa to pot.

Add spices and seasonings to pot and stir together.

Place lid on pot and allow to simmer for 20-30 minutes. Serve and enjoy!
