Pre-heat grill to 250° F and gather ingredients to season the meat.

Slather roast in mustard and generously cover with seasoning rub.

Place meat on the grill and allow to smoke for 5 to 6 hours.

When the internal temperature reaches  175° F remove from grill.

Allow meat to rest for 10 minutes before cutting into 1 inch cubes or pieces.

Move meat to pan and sprinkle with brown sugar and bbq sauce. Toss till covered.

Cover meat and place in oven or smoker for 90 minutes to finish caramelizing. 

When meat is fall apart tender remove from heat and enjoy as is or over mashed potatoes.
