Peel potatoes and chop into 4 or 5, one inch round pieces.
Add potatoes, water and salt to the pressure cooker. Cook on Manual for 9 minutes.
Quick release the pressure and drain off water.
Add the remaining ingredients to the pot and mash potatoes till everything is combined.
Top with parsley or butter and enjoy!
