SMOKED PORK BELLY BURNT ENDS

"These smoked burnt ends are the best kind of meat candy. Totally drool worthy!"

Pre-heat smoker or grill to 275° F. Cut pork belly into 1 inch cubes.

Season the pork with seasoning rub till coated on all sides.

Place meat on wire racks, put racks on grill and close the lid.

Allow meat to smoke until the internal temperature reaches 190° F.

Transfer the smoked pork to a pan and coat with bbq sauce, honey, brown sugar.

Add pads of butter and toss the smoked pork until meat is coated well.

Place pan on grill and allow pork to caramelize.  (45-60 mins)

Remove the pan from the smoker and allow to rest for 10 minutes. Enjoy!
