Sauté onions in a pot with butter till translucent.

Add chicken and curry paste to pot.  Sauté for another 5 minutes.

Add coconut milk, and water. Stir together and add in potatoes.

Add carrots and peas. Let simmer for 25 minutes. Stir in brown sugar till dissolved.

Serve curry topped with cilantro alongside rice or slice of naan.
