Ingredients
  

  • 4 tablespoons butter
  • ¼ cup flour
  • 2 cups chicken broth
  • 2 cups half and half
  • 1 cup salsa verde
  • 3, 15 ounce cans of white beans
  • 3 cups shredded chicken
  • 8 ounces pepper jack cheese cubed
  • 1 cup frozen corn optional
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions
 

  • Melt butter in pan over medium-low heat. Add flour to pot and stir together till all flour is absorbed, creating a rue.
  • Add chicken broth and whisk broth and rue mixture.
  • Add half and half to pot and allow to cook over medium heat for five minutes. Mixture will begin to thicken.
  • Add salsa verde, white beans, shredded chicken, cubed pepper jack, chili powder, cumin, salt, and pepper.
  • Stir chili till all the pepper jack has melted.
  • Serve chili with favorite toppings like sour cream, cilantro or fresh lime and enjoy,
