In a bowl separate 3 eggs so that you have only the yolks.
Add 1 whole egg to the bowl. Whisk eggs together.
Add salt, flour and water to the bowl. Mix everything together until a ball of dough begins to form.
Sprinkle your hands and ball of dough with flour. Knead dough continuing to sprinkle more flour on until dough is no longer sticky to the touch.
Transfer dough to a floured pastry cloth or floured countertop. You do not want your dough to stick.
Sprinkle a little extra flour on and begin to roll out dough. Continue to sprinkle with flour as needed so dough doesn't stick to counter or rolling pin.
Roll dough out. Allow dough to rest for 5 minutes.
Using a knife, pizza cutter or pasta cutter carefully begin cutting pasta into thin strips. Be careful not to scratch counter or cut cloth.
You can choose to cook your pasta immediately or allow it to dry on the counter for a few hours. If cooking immediately only cook for 2-4 minutes. If allowing to dry then cook, it will be closer to 12-15 minutes cook time.
If choosing to dry pasta and store, hang pasta on drying rack for 2 hours. When dry store in an air tight container for 3 months in the fridge and up to 6 months in the freezer.
