🥣 Step-by-Step Instructions
Firstly we are going to want to prepare our stew meat. If your beef is not already cut into 2 inch by 2 inch cubes go ahead and do this now. Then you will want to go ahead and season it with your salt and pepper.
Secondly add the meat to a large pot, like our Cast Iron Dutch Oven, with a little olive oil and allow to brown.
When mostly browned add the minced garlic, diced onion, carrots and celery to the meat and allow to saute on medium-high heat till onions are softened.
Once the onions are softened add the beef broth, paprika and thyme to the stew. Stirring occasionally while your bring the pot to a simmer. Then cover the pot with a lid and allow stew to simmer for 30 minutes.
Then in a second pot add chopped potatoes (roughly 2 inch chunks). Afterwards cover your potatoes with water and bring the pot to a rolling boil.
When potatoes are fork tender remove your pot from the heat and drain off all the water. When complete add in your butter, sour cream, salt and pepper to the potatoes. Then using a hand mixer mash your potatoes till a smooth consistency.
After 30 minutes of simmering go ahead and add in the Lipton soup mixes, then mix everything together well. Lastly, serve your beef stew over a generous amount of creamy mashed potatoes and enjoy!

- 1-2 tablespoons olive oil
