🥣 Step-by-Step Instructions
Firstly add oil to a large pot over medium heat. When hot add your onion, minced garlic, and red pepper flakes. Allow onions to cook until fragrant and translucent, about 5 minutes.

Afterwards add your squash, zucchini, carrots, sun dried tomatoes, chicken and Italian seasoning to the sautéed onions. Then turn heat to high and allow veggies to cook for 3-5 minutes stirring throughout.

When veggies are softened add your chicken broth to the pot and allow to come to a boil. After the Creamy White Lasagna Soup reaches a boil again add the parmesan cheese and pasta. Bring soup back to a boil and allow to cook stirring occasionally until pasta is al dente.

Remove pot from the heat and add heavy cream and pesto. Give everything a good stir and season with salt and pepper as needed. Serve soup topped with mozzarella pearls or more parmesan and enjoy!

👩🏻🍳 Make it Your Own
This one pot Creamy White Lasagna Soup is such a great recipe for tweaking to your personal taste and liking. There are lots of ways to change up this dish to make it your own.
Fresh Herbs - Add in fresh parsley or basil just before serving for an extra punch of flavor.
Veggies - Have fun playing with your veggies. You could try adding spinach, kale, bell peppers, mushrooms or peas. If you don't have sun dried tomatoes on hand you can use halved cherry tomatoes instead. Add while sautéing your onion and garlic to change their texture.
Pasta - As for the pasta - any kind will do! If you have a favorite or something else on hand go for it! For a more traditional lasagna feel try using mafalda pasta or broken lasagna noodles.
Protein - While chicken is definitely a lighter option you can always go with a more traditional lasagna protein source if desired. Ground beef, turkey or pork would all work great too.
Cheese - Try topping your bowl of soup with a dollop of ricotta cheese instead of mozzarella pearls if looking for more of a traditional lasagna vibe.

💭 Top Tips
Pasta becomes soggy or over cooked when it absorbs too much liquid. To help prevent the pasta in your Creamy White Lasagna Soup from becoming soggy you can try preparing it separately to better control the cook.
When both the soup and pasta are ready to serve, add the pasta to the bottom of each bowl and ladle the soup over top. Or you can add the cooked pasta directly into the soup just before serving.
🍽 Storing
Allow any leftover Creamy White Lasagna Soup to cool completely before storing. Transfer soup to an airtight container and it should hold up well for up to 3 or 4 days in the refrigerator.
Unfortunately I do not suggest freezing this soup as it is a cream based and will most likely separate upon thawing and reheating.
