This oatmeal cookie truly lives up to its name sake. With zested orange and lime each bite is like a true taste of sunshine.
Family Favorites
There is something magical about those family recipes that are passed down from one generation to another. These Sunshine Oatmeal Cookies are one of those recipes for me just like my grandma Maryan's Orange Julius Smoothies.
These oatmeal cookies were my absolute favorite growing up. In fact, they are one of my favorites to make all winter, right along with our Citrus Cranberry Salad. Both recipes help me pretend, even for just a little while that Utah's never ending winters are gone and I am living a life basking in never ending sunshine.
Springtime Lovin'
I know. I know, it is still technically winter. A girl can dream though! There is something about these cookies that helps me to forget the sludge and snow for just a few moments. Each bite packs a zesty summery punch and gives me hope for warmer spring days. With raisins, lime juice and orange zest every bite is a little bit of sunshine.
And I may or may not have been even more eager to make this recipe so that I had an excuse to use this puppy. Adding a Kitchen Aid to our appliance arsenal has been a long time dream of mine. Sunshine Oatmeal Cookies
Warm and comforting these cookies give all the flavors you'd expect from an oatmeal raisin cookie. With zested orange and lime each bite is a burst of sunshine. These Sunshine Oatmeal Cookies are bright and fresh, with a new twist sure to have you head over heels!
Ingredients
- ½ cup butter, softened
- 1 cup brown sugar, packed
- 1 egg
- ½ teaspoon baking soda
- 1 cup flour
- ½ teaspoon salt
- 1½ cup oats, uncooked
- 2 tablespoons orange zest
- 3 tablespoons lime juice
- ½ cup raisins
Instructions
- Preheat oven to 350°. Prepare cookie sheet by lightly greasing or covering with parchment paper.
- Cream butter and sugar in a bowl. Beat on medium speed until mixture is light and fluffy.
- Add egg to bowl and mix till just incorporated. Be careful not to overmix.
- Add dry ingredients, flour, baking soda and salt to the mixture. Mix well.
- Add remaining ingredients to the bowl mixing till dough comes together.
- Using a scoop drop rounded balls of dough onto the prepared cookie sheet.
- Bake cookies at 350° for 10-12 minutes or until tops are light golden brown.
- After pulling out the cookies and allowing them to cool slightly transfer them allow to cool completely.
